Resilient in nature

This “muroka” (unfined) “nama” (unpasteurized) junmai daiginjo was created as a thank you to those who helped support the brewery after a devastating earthquake hit Niigata prefecture in 2007. The melon notes from the prefecture-developed yeast express the delicate yet resilient fermentation, and the raw, flavorful and bold structure holds its own with deep fried dishes. The plastic cap, called AZK Crown cap, helps keep the freshness inside.
