“Hitotsubi” has several meanings. Directly translated, it can point to single pasteurization, and poetically, it expresses a single light illuminating a dock. The brewers recommend enjoying this sake from a wide-mouthed glass or almost saucer-like vessel. “Hitotsubi” has a medium intensity aroma and texture with some light weight. Initial flavors of banana bran, like the top of a muffin, gives way to some umami and dried fruit notes.
