Using two sake rice from Yamagata, Yukimegami and Dewakirari, and two different kinds of yeast also from Yamagata — Yamagata NF-KA and YK009 — this “nama” (unpasteurized) “genshu” (undiluted) sake bursts of melon notes. They’ve pressed this sake with no added pressure, which results in only half the yield, it is truly an extravagant sake! The president and brewmaster Toshihito Watarai says to please try it on the rocks, and cut with soda.
