This decadent daiginjo is brewed using their own proprietary apple yeast and high temperature saccharification method discovered in 1940. Their discovery and the use of this special yeast is what gives this sake its refined aroma as well as its soft acidity and mix of apple and pear notes. The 72 clocks on the label represent the 72 hours spent to carefully polish the rice to 50%, the required ratio daiginjo sake.
