“Senshin” means returning to the beginning and living with respect for all. The makers believe sake making starts with rice farming, and have done careful soil analysis to produce rice with the exact desirable mineral content. The naturally-raised Takanenishiki sake rice is then polished way down to 28%. This gives a soft rice aroma and white orchid-like bouquet with a lingering confectionery rice powder sweetness in the finish.
