The makers believe sake making starts with rice farming, and have done careful soil analysis to produce rice with the exact desirable mineral content. The naturally-raised Takanenishiki sake rice is then polished way down to 28%. This gives a soft rice aroma and white orchid-like bouquet with a lingering confectionery rice powder sweetness in the finish.
